Disney Copycat Gingerbread cookie recipe

It’s 17 days till Christmas! What??!! I love Christmas time! I’m here for the lights, shopping, parties, food, family time, and baking! Soaking in all the family memories. It go’s by in a flash!!!

This recipe is a copycat to Disneyland’s mickey gingerbread cookie! It’s soft and chewy. Perfect ginger and molasses flavor! And gives and the Christmas feels! My kitchen smells so good!

There’s a few important steps highlighted in the image below. This was through a lot of trial and error so follow instructions to get them not to spread or stick to your roller. Cookie cutters 5 inch cooked at 8-9 mins so smaller cutters will need less time.


  • 3 cups flour
  • 3/4 cups packed brown sugar
  • 3/4 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1 tablespoon ginger
  • 2 teaspoons ground cloves
  • 1/2 teaspoon salt
  • 12 tablespoons butter, softened to room temperature (not melted)
  • 3/4 cup molasses
  • 2 tablespoon milk (almond milk or soy is fine too)

Have an egg allergy this is a great option since the recipe calls for no eggs.


  1. With mixer, stir together flour, brown sugar, baking soda, cinnamon, ginger, cloves, salt on low speed. Stop mixer and add butter. I cut into pieces instead throwing it all in. Mix at medium low for 1-2 minutes. Reduce speed to low and add molasses and milk; mix until dough is evenly moistened about 30 seconds. Increase speed for additional 10 seconds.
  2. Scrape dough from bowl onto parchment paper and wrap it with Saran Wrap. I also place this in a ziplock bag once it’s wrapped. Refrigerate at least 2 hours or up to over night. THIS IS AN IMPORTANT STEP! This dough is best is chilled. It will spread if they are not chilled. And much easier to work with too.
  3. Preheat over to 350 degrees. Line cookie sheet with parchment paper.
  4. Rough dough onto parchment. I do this in sections at a time. Cut dough with cookie cutters and add to sheet about a inch apart.
  5. Bake cookies 8-9 minutes. Important not to over bake these to get soft and chewy cookies. Cool cookies on lan for 2 mins.
  6. Store in a airtight container or ziplock and ENJOY!

Some tips: If your dough sticks it’s ok add a tiny bit of flour to your rolling pin. All you need is a little bit. Also keep working with it.

Spoonful of Sugar Cupcake Topper DIY

I couldn’t do another tutorial until I did quick one that represented “Spoonful of Sugar Baker” and well Mother’s Day is almost here. And I came across my Mother’s Day card from last year… tears! I love cards!img_7892

Moms are the most magical people ever! They guide you, teach, show unconditional love, encourage, and discipline. Moms are doctors, hair stylists, chefs, teachers, and most importantly someone who is always there to support you! Moms are incredible and even when you feel like you’re not enough as mom just know you are more than enough to your children!  There are hard days and days that you feel like super woman! But seriously when you see your children smiling it makes it worth it all! They say it takes a village to raise a child but how about a village of women encouraging each other! Check in on each other, encourage one another, give a compliment, smile, and let each other know you are not alone! I believe every mom is doing what’s best for her children and family so stop with the judgments and negative thoughts! Moms, let’s have each other’s backs! Our children look at us and see the most beautiful person in the world inside and out and I want to be what they see! With that I made a very quick tutorial on creating these Mary Poppins inspired toppers! Oh and don’t doubt your self moms! The card that says “You are the Best” you are exactly that!!!



This has to be the easiest little cupcake topper to do! And if you love the Mary Poppins this would be fun to do with your children while watching the classic or new Mary Poppins movie! A baking & movie night is so fun!!!


Mini spoons (found at Michaels crafts)

White chocolate melts

White sprinkles

Red ribbon

2 bowls

Parchment paper

Step 1

In a microwave safe bowl Melt the white chocolate. Microwave in 30 minute increments mixing in between. Make sure not to over heat the chocolate. If it looks dry or stiff add one teaspoon of vegetable oil and mix well.

Step 2

No mess!

Dip your mini spoons into the white chocolate. Over your other bowl sprinkle your white sprinkles on to the spoon. The bowl will catch any sprinkles that didn’t make it onto your spoon. Next, place them on your parchment paper.

Step 3

Once the chocolate has dried. Cut the red ribbon and tie a bow onto the spoon.

Practically Perfect

These can be used as chocolate pops or as toppers for a dessert.

Easy Teacher Appreciation DIY

Teachers appreciation week begins today! It’s so important to teach our children to show appreciation and gratitude to those around them! These apples are the “fairest of them all” and so easy and fun to make! Let’s put a smile on someones face!! This is a great project for your child to join in!! Today my daughter London will be helping me prepare these treats! We created a short video tutorial to show you how easy these are to make!



Red chocolate melts

Green chocolate melts

Parchment paper

Bag or small zip lock bag


Personalized note

Begin by placing your red chocolate in a microwave safe bowl. You want to microwave in 30 second increments till chocolate is completely melted. Mixing in between. If it seems stiff or not melting down add a teaspoon of oil to your melted chocolate. This will help thin it out and keep it from drying out. I prefer coconut oil but vegetable oil works too.

The chocolate will me in a silky smooth consistency.

PRO TIP: add a dollar store table cloth to your table or island for easy clean up. This can get messy. This tip makes it so easy to clean up after. Just roll up the table cloth when you are finished, throw it out, and DONE! 

Now that the red chocolate is melted dip each pretzel one at a time. Your child will love this job. Use your fork to help remove the pretzel from the bowl. Give the pretzel a tap at the edge of your bowl to remove access chocolate. Then place the pretzel on to the parchment paper. Continue until all pretzels are covered in chocolate. Any leftover chocolate can be used to dip strawberries in or drizzle over almonds basically endless possibilities of your choice!

Next step microwave the Green chocolate. You will need less chocolate than the red. We did 1/4 cup of the green melts. Microwave in 30 second increments just like the red chocolate. Watch the video to see how I added my chocolate to the ziplock bag. Once all the green chocolate is added to the ziplock. Cut a tiny opening at the bottom corner of the bag. Squeeze the green chocolate to the top of the pretzel like an apple leaf.

These will dry within 20 mins once they are finished add them to a bag, container or decorative box. Add a personalized note from your child! Thank your teacher for something special they are helping you with. Or just for being awesome! London loved making these! I hope your child will to! Dundundun… the name change!

  • Cupcake Fetish was thought of in my grandma Rosa’s kitchen. In my mind I thought I’ll make the best cupcakes filled with different flavors, drizzled in chocolate, presented in a extra fancy box at a farmers market. And well since then everything has gone in a different direction. Pictured is one of my first paid orders. I did start with cupcakes but then it turned into cakes, cake-pops, rice crispy pops, chocolate covered everything, you get it! I came up with all these flavor combos but then when it came to my orders they wanted chocolate or vanilla. So I went with it and made a basic flavors list. Since then a lot has changed in my business & personal life. I got married, have 2 kids now, and moved. We decided as a family I’d be a stay at home mom. Taking on this new adventure was difficult because I have always working & I loved what I did but I was very grateful to be at home with my little ones. And that out weighed any other opportunity. Staying at home gave me the chance to also bake more orders. This side hobby began to grow. I have wanted to change my name for a while now. I felt like I’ve out grown the name Cupcake Fetish. After brainstorming I found the perfect name to fit me! And there comes my new name Spoonful of Sugar Baker. Not only because it’s a line from one of my faves, Mary Poppins. But it’s cute and practically perfect in everyway.. too cheesy!? I hope not! So Bye bye Cupcake_Fetishofficial and hello Spoonful of Sugar! I hope you love it!! New adventures await!

Welcome to my kitchen!

Hello & Welcome to my very first blog post! My name is Natalie. I am very excited to share with you some of my best baking tips and tricks focusing on fun and easy Disney desserts you can recreate at home! One question I get asked a lot by friends, family, and aspiring cake artists is how I started. This question is easy to answer. I love baking, my family said it tastes so good, and i could use my creativity in the kitchen! I LOVE cooking! Now this all started out as a hobby but my family motivated me to start my own business. I made a few desserts for a friends party and boom the next month I had orders! I wanted to bake cupcakes only but then I got asked to make a cake. You see how smooth my buttercream looks now?? It did not look like that 8 years ago!!!! Back then it took me 3 hours. YES! THREE! My roommate Grace can vouch for that and it was still imperfect! But people loved the way it tasted and I had amazing supportive friends, family and husband! My cousin Dez and aunt Sally are such good bakers too so I guess you can say it runs in the family. They gave me such helpful tips and shared the basics of cake decorating to get me going in the right direction! I didn’t go to culinary school or any fancy classes. I took one cake decorating class that I wasn’t even that good at but was determined to make it work. Best advice I can give is practice, practice, practice! Whether you want to be a cake artist or want to bake an awesome cake for you child’s party you can totally do it! And even if its not like the Pinterest pic its ok! You did it with love and that’s the best part! Now that I have been baking for over 8 years I wanted to venture out and try something new. I love teaching ( I was a teacher at a private christian school for 6 years. I taught Art & 1st grade!) and I LOVE Disney so I’m starting this blog hoping to teach some cake decorating lessons of my own! Disney inspired cupcakes you can do with your kids, friends, or for a party! I prayed and this vision was given to me and I want to see what this will lead to!
